Jalapenos in container with snap lid for self-service in cafeteria with lid not being consistently replaced over container opening to protect food properly from contamination.
Either put in containers with lids (ind. servings), use container that can be kept closed easier - flip lid and opening for utensil to protect food. New Violation.
Remarks Hot water sanitizing dishmachine final rinse temperature 176F (max-temp thermometer)
The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
