Foods uncovered in bottom of prep coolers-keep all foods covered-cos foods were covered Corrected On-Site. New Violation. Pans,dishes with food residue-clean all items-cos dishes will be recleaned Corrected On-Site. New Violation. Original servsafe certificate must be posted on wall New Violation. Food residue/dust on shelving throughout kitchen and in walk in cooler,underneath floor mixer-clean all areas Repeat Violation.

The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
