Employee eating in kitchen--must designate an area for employee to eat that is away from food prep and storage areas, single serve, single use items New Violation.
No paper towels at only handsink in kitchen, no paper towels in restrooms---must keep paper towels at all times to encourage required employee handwashing New Violation.
Handsink blocked New Violation.
Cleaning cloths on equipment, tables, etc.--keep submerged in santizer between uses to avoid potential contamination New Violation.
Bulk containers and all equipment need detailed cleaning to be free of grease, food accumulations; hood needs cleaning asap to prevent grease blowing onto food and food contact surfaces Repeat Violation.
Floors, walls, ceiling (and vents) all need better cleaning more frequently to prevent insect/rodent attraction and contamination New Violation.
The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
