Foods stored uncovered in walk in cooler and reach in coolers-store all foods covered to protect from possible contamination New Violation.
Ice scoop laying on top of ice machine-store scoop in a clean container or in ice with handle extended up New Violation.
Leak from pipe in walk in freezer, gaskets on 2 door reach in cooler and prep cooler torn-repair leak and replace gaskets-metal flashing around top of drainboards at dishmachine wiht gaps-either remove entire flashing or seal to close gaps and cut off
insides of oven at grill with heavy grease accumulation and evaporator fans in walk in cooler dusty-outside of food processor dirty-clean all areas and keep all equipment clean on outsides as well Repeat Violation.
Floors with debris underneath equipment and at floor/wall junctures-clean floors all the way and pull equipment out on a regular basis to clean underneath New Violation.
The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
