Hand sink in cook area without soap at start of inspection. For proper and required handwashing, all hand sinks must be properly stocked at all times.
COS: Soap was put into dispenser. Corrected On-Site. New Violation.
Sanitizer in cloth containers in kitchen over 400 ppm - manufacturer suggests 1 tablet per gallon and half of water and in sanitizer containers using 2 tablets in 2 quarts water at the most.
COS: Remade with correct level of sanitizer. Corrected On-Site. New Violation.
Dry cloths laying on cutting boards and tucked in pockets for wiping utensils/hands. Clean cloths can only be used dry to wipe spills off plates or stored in a container of sanitizer between uses. (Knives can be wiped with paper towel and switch for clean and sanitized knife every 4 hours of use).

2-door salad cooler full of water inside bottom - cooler "leans" forward - try to level and see if that helps cooler drain/evaporate properly. New Violation.
No test strips for QUAT sanitizer tablets used for sanitizer containers. Keep level at required 200ppm (per manufacturer's label) and change frequently when dirty. New Violation.
Remarks Hot water exceeds required 100F at hand sink and 110F degrees at 3-compartment sink.
The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
