Sanitizer solution (chlorine) in cloth buckets tested 0 ppm using provided test strips. Corrected on site. Solution remade to be within recommended levels of 50-100ppm. Corrected On-Site. New Violation. Utensils, beneath grill, in drawer with food debris/residue. Clean drawers regularly. Corrected On-Site. New Violation. Remarks Reviewed time as a public health control document for shell eggs and verified hot water at handsink is 100F. Hot water warewasher was verified to be within manufacturer's recommendations.

The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
