Grill untensils being stored in container of sanitizer between uses. In use utensils can be stored in the product or on a clean and sanitized surface (that is cleaned and sanitized every 4 hours)or in a container of water if the water is maintained at 135 degrees and changed frequently.

Reach-in cooler in Tiki Hut with large accumulation of water inside bottom. This water is non-potable and should not be allowed to contact food. Check to see if unit is level to allow for drainage. Repeat Violation.
The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
