Inpection Notes Inside of large ice machine in bar with heavy accumulation of mold inside/around chute. Empty completely for cleaning and sanitizing. Can opener with accumulation of food on blade and under gear - after use clean and sanitize. New Violation.
Chicken wings cooked and piled in hotel pan and covered for cooling in walk-in cooler. Need to spread out and loosely cover to insure proper and rapid cooling.

Cook with dirty apron working at cook line - keep outer clothing clean to prevent contamination of food/food contact surfaces.

Dry cloths being kept in apron strings for wiping hands during cooking. Cloths can only be clean and dry for wiping spills on plates or stored in a container of sanitizer between uses. If hands get dirty, they must be washed, not wiped.
