No papertowels stocked at handsink in back kitchen. Corrected on site. Papertowels were restocked after discussing with staff. Corrected On-Site. New Violation.
Soup, beans, cheese dip, and salsa temped at 45F in walkin cooler and were not required cold holding temp of 41F or less. Corrected on Site. Food items were voluntarily discarded. Walkin cooler was to be serviced by maintenance within hour. Corrected On-Site. New Violation.
Cut vegetables in containers stored on floor while cutting more vegetables. Containers of food should be kept atleast 6" off the floor, put away, and covered with lid once finished prepping food. Corrected on site. Containers of food placed in walkin cooler. Corrected On-Site. New Violation.
Flys entering kitchen and needs more control. Flys presence should be minimized by eliminating harborage conditions and using trapping devices specified in the rules. New Violation.
The effective date of the new Food Service Rules and Regulations is February 15, 2006. Establishments permitted after February 15, 2006 will have 90 days to obtain certification for a food service manager. Enforcement of all other requirements begins on November 15, 2006.
