Rice temped at 109F, chicken temped at 130F, and burrito temped at 127F on hot holding unit located on mobile truck. Food items should be 135F or more when hot holding. Corrected on site. Food items to be served immediately and any remaining discarded within the hour. Pre-heat hot hold box prior to putting in food items. Corrected On-Site. New Violation.
